The world of brassicas is vast—or at least it certainly feels that way.
Within this lush botanical universe, Romanesco broccoli is widely considered one of the most stunning: with its pale lime-green hue, it stands out for its striking pyramidal geometry, repeated seamlessly from whole head to tiny floret with almost mathematical precision.
It is so visually perfect that it is often cited as nature’s living example of a fractal. In the kitchen, however, it is so much more: packed with vitamins A and C, as well as gut-healthy fibre, it serves as the ultimate wildcard for any diet aimed at being both wholesome and delicious.
This detox Romanesco soup can be a true culinary lifeline: effortless to prepare, it requires only a handful of ingredients to deliver a rich, comforting meal.
Ingredients (serves 4):
2 heads of Romanesco broccoli
2 yellow onions
2 medium potatoes
125 ml unsweetened plain yogurt
Vegetable stock (as needed)
Croutons (as needed)
Salt
Black pepper
Method:
Prepare the stock
Prepare a pot of vegetable stock. If you are short on time or fresh ingredients, a good-quality stock cube will work just as well. Meanwhile, wash the Romanesco heads, gently snapping off the florets one by one.
Prep the vegetables
Peel the potatoes and slice them fairly thin—this ensures they break down easily during cooking to thicken the soup. Thinly slice the onions.
Build the base
Heat two tablespoons of extra virgin olive oil in a Dutch oven or heavy-bottomed saucepan. Add the sliced onions and potatoes, sautéing for a few minutes to let the flavours develop.
Stir in the Romanesco florets, cook for another minute, and then pour in just enough warm stock to cover the vegetables.
Simmer
Cover and simmer for 15 to 20 minutes until the Romanesco florets are completely tender.
Before turning off the heat, scoop out 4 or 5 intact florets and set them aside for garnishing.
Blend and serve
Decide whether you prefer a classic, rustic soup or a velvety purée. For a smooth, creamy texture, insert an immersion blender directly into the pot and blend until completely silky.
Ladle into bowls while still warm, garnish each portion with a dollop of plain yogurt and one of the reserved florets, and serve immediately with croutons.
